Skinny Veggie Pizza
- 4 flour tortillas
- 4 c. baby spinach
- 1 medium red pepper
- 1 medium zucchini
- 2 tsp. minced garlic
- 2 tsp. olive oil
- salt
- Black pepper
- 3/4 c. marinara sauce
- 4 oz. goat cheese
- 1/4 c. finely grated Parmesan cheese
- 1/4 c. fresh basil leaves
- Arrange oven racks in top and bottom thirds of oven.
- Preheat oven to 475 degrees F. Spray 2 large cookie sheets with nonstick cooking spray; place 2 tortillas on each.
- In large bowl, toss vegetables, garlic, oil, and 1/2 teaspoon each salt and black pepper until coated.
- Microwave on high 2 minutes, stirring once.
- Drain, if necessary.
- Spread sauce on tortillas.
- Top with vegetables and cheeses.
- Bake 12 minutes or until tortillas are crisp around edges, switching racks halfway.
- Top with basil.
