Simmered Flounder

  1. Heat the water and sake in a frying pan.
  2. Once it comes to a boil, reduce to medium heat.
  3. Defrost the flounder and wipe off any moisture before adding to the frying pan.
  4. Simmer for about 3 minutes over low heat, while ladling the sauce over the fish.
  5. Add the sugar and ginger.
  6. Simmer for another 2 minutes, then add the soy sauce.
  7. Continue ladling the sauce over the fish for 2 minutes, then add the mirin.
  8. Once the fish has a glossy finish, it's done.
  9. Serve up using a spatula.
