Chicken Spinach Quiche Recipe
- 1 unbaked pie shell
- 1 c. cooked chicken
- 1 c. shredded Swiss cheese
- 1 (10 ounce.) pkg. frzn minced spinach, cooked & well liquid removed
- 1 sm. onion, finely minced
- 2 Large eggs, lightly beaten
- 3/4 c. mayonnaise
- 2 tbsp. grated Parmesan cheese
- 3/4 c. lowfat milk
- 1/2 teaspoon dry basil
- Grinding of black pepper
- Bake pie shell, 375 degrees, after piercing sides and bottom of crust with fork, for 10 min, remove and reduce temperature to 350 degrees.
- In large bowl, toss together chicken, cheese, spinach and onion.
- Spoon into baked shell.
- Beat Large eggs, mayo, lowfat milk, Parmesan cheese, basil and pepper.
- Pour over chicken mix.
- Bake at 350 degrees for 40 min or possibly till golden brown and set.
- Let stand 10 min before cutting.
- May be warmed up.
- Serves 6 to 8.
