Mama'S Apple Fritters(Mrs. Ada Brooks)
- 1 c. sifted all-purpose flour (sift before measuring)
- 2 Tbsp. granulated sugar
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 egg
- 1/2 c. milk
- 1/2 tsp. vanilla extract
- 2 medium size tart apples, pared and coarsely chopped (1 1/2 c.)
- Crisco oil
- confectioners sugar
- Sift together flour, granulated sugar, baking powder and salt. In medium bowl, with rotary beater, beat eggs, milk and vanilla until well combined.
- Gradually add flour mixture, beating until smooth.
- Stir in apples.
- In an electric skillet or heavy saucepan, slowly heat oil (1 1/2 to 2-inches deep).
- Drop fritters by rounded tablespoonfuls into hot oil.
- As they rise to surface, turn over with slotted utensil.
- Fry until golden brown on both sides (4 to 5 minutes in all).
- Drain on paper towel.
- Serve hot, sprinkled with confectioners sugar.
- Makes about 12 fritters.
