Beans & Italian Sausage Recipe
- 1/2 pound sweet Italian sausage
- 1/2 pound warm Italian sausage
- 1 tbsp. vegetable oil
- 1 3/4 c. minced onion
- 3/4 c. mushrooms, sliced (3 c.)
- 3 (16 ounce.) cans pork & beans in tomato sauce
- 1/3 c. tomato juice
- 1 teaspoon leaf oregano, crumbled
- 1 teaspoon salt
- 1/8 teaspoon crushed red pepper flakes
- 1 c. uncooked long grain rice
- Cook sausage in vegetable oil in a large skillet till brown and no pink remains, about 20 min.
- Remove with a slotted spoon to a Dutch oven or possibly heavy saucepan.
- Pour off all but 2 Tbsp.
- of fat from skillet.
- Saute/fry onion and mushrooms till tender, about 3 min.
- Add in onion mix to sausage.
- Add in beans, tomato juice, oregano, salt and pepper to sausage.
- Bring to boiling; lower heat; simmer 15 min.
- While beans cook, cook rice following label directions.
- Serve beans over rice.
- Makes 8 servings.
