Beans & Italian Sausage Recipe

  1. Cook sausage in vegetable oil in a large skillet till brown and no pink remains, about 20 min.
  2. Remove with a slotted spoon to a Dutch oven or possibly heavy saucepan.
  3. Pour off all but 2 Tbsp.
  4. of fat from skillet.
  5. Saute/fry onion and mushrooms till tender, about 3 min.
  6. Add in onion mix to sausage.
  7. Add in beans, tomato juice, oregano, salt and pepper to sausage.
  8. Bring to boiling; lower heat; simmer 15 min.
  9. While beans cook, cook rice following label directions.
  10. Serve beans over rice.
  11. Makes 8 servings.
