Mike's 100 Clove Roasted Garlic Spread

  1. Preheat oven to 350.
  2. Chop the small brown ends from garlic cloves.
  3. Place garlic on two sheets of tinfoil.
  4. Coat garlic cloves in garlic olive oil.
  5. Add all seasonings and coat cloves well.
  6. Double wrap your garlic.
  7. You don't want her to burn.
  8. Wrap garlic up tightly.
  9. Roast garlic for 45 minutes.
  10. Test your garlic.
  11. If a knife goes thru them easily - they're fully cooked.
  12. Smash your warm garlic with a potato masher or fork.
  13. Taste test your garlic mixture and see if you'd like to add more cracked sea salt.
  14. Sea salt really does make this dish!
  15. Chop sun dried tomatoes and mix well into your smashed roasted garlic clove mixture.
  16. Seal her up tight and let her sweat for a half hour.
  17. Stir intermittently.
  18. Serve spread warm or cold on toasted bread, quality crackers or heavy duty chips.
  19. Roasted Garlic Trisket Crackers are the BOMB with this spread!
  20. Here in New Mexico, we typically squeeze lemon or lime wedges on everything we eat.
  21. But, lemon tastes much better on this spread IMHO.
  22. Consider those additions.
  23. They really do pair well and contradict the sweetness of the garlic and the sun dried tomatoes.
