Watermelon-Ginger Agua Fresca

  1. Place 2 1/2 cups watermelon and 3/4 cup cold water in blender.
  2. Puree until smooth.
  3. Pour agua fresca into large pitcher.
  4. Repeat 3 more times with remaining watermelon and cold water.
  5. Add lime juice, 1/4 cup sugar, and ginger juice to pitcher and stir to blend.
  6. Add more sugar by tablespoonfuls, if desired.
  7. Refrigerate until well chilled, at least 3 hours.
  8. DO AHEAD Can be made 8 hours ahead.
  9. Keep chilled.
  10. Stir before serving.
  11. Fill glasses with ice cubes; pour agua fresca over.
  12. Garnish each glass with lime wedge and serve.
