Shrimp Gazpacho Recipe

  1. Combine first 4 ingredients in medium bowl.
  2. Add in shrimp; cover mix and chill 1 to 2 hrs.
  3. Combine tomatoes, green and red pepper, cucumber, green onions, cilantro and Jalapeno in large bowl.
  4. Add in tomato juice.
  5. Stir in shrimp mix.
  6. Season to taste with salt and pepper.
  7. Garnish with lemon wedges.
  8. My family adores seafood and I like gazpacho, so I thought it was a good idea to make it different then the usual.
  9. I think your family and guests will find it wonderful also.
  10. 6 servings.
