Beef And Chinese Lettuce Soup Recipe

  2. Slice beef thin.
  3. Combine soy sauce and oil.
  4. Add in to beef and toss.
  5. Let stand 30 min, turning meat occasionally.

  7. Bring stock to a boil.
  8. Meanwhile cut lettuce in 2-inch sections.

  10. Add in lettuce to stock with salt and sugar and simmer, uncovered, till nearly done (about 10 min).

  12. Add in beef and simmer, uncovered, 3 to 4 min more.
  13. VARIATION: For the Chinese lettuce, substitute either alone or possibly in combination: celery, shredded; Swiss chard or possibly spinach leaves, cut in half; or possibly water cress, cut in 2-inch sections.
  14. Reduce cooking time in step 3 to about 2 or possibly 3 min.
