Fancified Tator Tot Hotdish

  1. Sautee the onion, and garlic in a bit of olive oil or butter.
  2. Add the chicken, crumble and cook until no longer pink.
  3. Add the mushrooms and spinach.
  4. Cook and stir another 5 minutes or so.
  5. Add salt and pepper.
  6. Add soups, sour cream, and milk.
  7. Stir until thoroughly combined and check for seasoning.
  8. Pour into a large casserole dish.
  9. Top with tator tots.
  10. Bake at 400 for 30-45 minutes.
  11. Finish under broiler setting for extra browning if desired.
  12. Let cool for 10-15 minutes before serving.
