Deviled Drumsticks

  1. Parboil chicken legs in 2 cups water with onion, carrot and marjoram for 1/2 hour.
  2. Do not overcook.
  3. Remove drumsticks from pot.
  4. Add 1 cup water, salt, pepper and 1 teaspoon aromatic bitters.
  5. Mix flour with small amount of water from pot and add to pot until gravy is thickened; set aside.
  6. Score drumsticks and rub with prepared mustard mixed with 1 teaspoon Angostura Bitters.
  7. At serving time, heat gravy and broil drumsticks under the broiler until crisp and brown.
  8. Remove to heated platter and brush with butter.
  9. Yields 6 to 8 servings.
