Sausage And Potato Soup Recipe
- 2 c. minced onion
- 3 carrots, minced
- 4 teaspoon caraway seeds
- 1/4 c. butter
- 3 lg. baking potatoes, peeled & cubed (about 4 c.)
- 1 (46 ounce.) can chicken broth
- 1/2 pound smoked sausage like Hillshire (minced)
- 2 c. lowfat milk
- In a 5 to 6 qt saucepan saute/fry onion, carrots and caraway seeds in butter till onion is tender.
- Add in potatoes and chicken broth.
- Bring to a boil.
- Reduce heat, simmer till vegetables are tender, about 25 min.
- Remove from heat, puree half of the mix in food processor or possibly blender.
- Return to saucepan.
- Add in sausage and lowfat milk.
- Cook over low heat till sausage is heated.
