Fruit and Nut Oatmeal Cookies

  1. Heat oven to 350.
  2. In large bowl, beat brown sugar, egg, applesauce, oil and vanilla on medium speed of electric mixer until well blended.
  3. Add combined flours, baking soda, cinnamon and salt; beat on low speed just until blended.
  4. Stir in oats, fruit and walnuts; mix well.
  5. (Dough Will Be Moist).
  6. Drop dough by level measuring tablespoonfuls about 2-inches apart onto ungreased cookie sheets.
  7. Bake 9-11 minutes or until edges are light golden brown.
  8. (Do Not Overbake.
  9. Centers Will Look Soft).
  10. Cool 1-2 minutes on cookie sheets.
  11. With wide spatula, transfer to wire racks.
  12. Cool completely.
  13. Store cookies in tightly covered container, separating layers with waxed paper, up to 2 days.
  14. For longer storage, freeze.
