Asparagus and mushroom eggs Recipe progressivenewamerican

  1. fry garlic in olive oil on medium-high for a minute or two and then add mushrooms and season.
  2. Cook until soft (about 5 minutes).
  3. Remove to a bowl.
  4. Add asparagus (tips and stalks) to the hot pan (add more oil if needed) and season.
  5. Cook for 2-3 minutes stirring often.
  6. Remove to bowl w/ mushrooms.
  7. Add eggs to pan, add salt and pepper, and stir with a whisk until just set.
  8. Divide eggs between two bowls, top with aspargus/mushroom mixture and scallions.
  9. Serve
