Red Lentil Soup

  1. Heat oil in a large heavy based saucepan.
  2. Add onion, cook over medium heat until softened.
  3. Add pumpkin, celery, carrot and garlic.
  4. Cook a further 2-3 minutes.
  5. Add lentils, water and stock to the vegetables, bring to the boil, reduce heat and simmer for 10-15 minutes.
  6. Puree with blender until smooth.
  7. Stir in dressing, herbs and pepper.
  8. Return to the heat, and bring back to the boil, serve immediately.
