Red Lentil Soup
- 1 tablespoon canola oil
- 1 onion, finely chopped Safeway 3 lb For $2.99 thru 02/09
- 200g peeled pumpkin, chopped
- 2 sticks celery, chopped
- 1 carrot, chopped Target 2 lb For $3.00 thru 02/06
- 2 garlic cloves, chopped
- 1 1/2 cups red lentils, rinsed
- 5 cups water
- 1 cup salt reduced chicken stock
- 1/2 cup KRAFT FREE* Italian Dressing
- 1/2 cup Italian parsley leaves, chopped
- 1/4 cup coriander leaves, chopped
- black pepper, to taste
- Heat oil in a large heavy based saucepan.
- Add onion, cook over medium heat until softened.
- Add pumpkin, celery, carrot and garlic.
- Cook a further 2-3 minutes.
- Add lentils, water and stock to the vegetables, bring to the boil, reduce heat and simmer for 10-15 minutes.
- Puree with blender until smooth.
- Stir in dressing, herbs and pepper.
- Return to the heat, and bring back to the boil, serve immediately.
