Methi Wala Alu Gobhi Matar

  1. Heat oil in 6 qt sauce pan.
  2. When hot, add garlic and ginger.
  3. Fry for about 10 to 15 seconds.
  4. Add onions and saute' for 8 to 10 minutes over medium to high heat, stirring once every 2 to 3 minutes.
  5. Add chopped tomatoes.
  6. Stir and cook for about 5 minutes.
  7. Add all the spices, salt, and dried fenugreek.
  8. Stir and cook for another 2 to 3 minutes.
  9. Add potatoes, mix, and cook partially covered for 7 to 8 minutes, stirring every 2 to 3 minutes.
  10. Add cauliflower, mix and cook, covered, over medium heat for 20 minutes, stirring every 3 to 4 minutes.
  11. Add peas and cook another 2 minutes.
  12. Add lemon juice and cook another 2 minutes.
  13. Serve immediately.
