Breakfast Casserole
- 12 Eggs
- 1/2 cup Milk
- 1 lb ground breakfast sausage or bacon
- 1 packages diced or shredded frozen potatoes
- 1/2 tsp salt
- pinch pepper
- 1/2 chopped onion
- 1 tbsp oil
- 1 1/2 cup Shredded Mild Cheese
- Saute onion and sausage/diced bacon in a pan with oil for 10 minutes on medium heat
- While onions are sauteing whisk salt, pepper, milk and eggs in a large bowl until well incorporated.
- Coat a 9x13 baking or casserole dish spray or coat with oil or cooking spray.
- Add potatoes to bottom of pan.
- Add 1/2 of cheese on top of potatoes, followed by meat and onion mixture.
- Next pour in eggs and top with remaining cheese.
- Bake uncovered for 30 minutes on 375F.
