Breakfast Casserole

  1. Saute onion and sausage/diced bacon in a pan with oil for 10 minutes on medium heat
  2. While onions are sauteing whisk salt, pepper, milk and eggs in a large bowl until well incorporated.
  3. Coat a 9x13 baking or casserole dish spray or coat with oil or cooking spray.
  4. Add potatoes to bottom of pan.
  5. Add 1/2 of cheese on top of potatoes, followed by meat and onion mixture.
  6. Next pour in eggs and top with remaining cheese.
  7. Bake uncovered for 30 minutes on 375F.
