Chicken Parmesan
- 3 chicken breasts, skinned and boned
- 2 eggs, slightly beaten
- bread crumbs
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. oil
- 2 c. tomato sauce
- 1/4 tsp. basil
- 1/4 tsp. garlic powder
- 1 Tbsp. margarine
- 1/2 c. grated Parmesan cheese
- 8 oz. sliced Mozzarella
- Pound chicken until thin.
- Combine eggs, salt and pepper.
- Dip chicken in egg mixture and then in bread crumbs.
- Brown quickly in oil.
- Drain chicken and put in casserole pan.
- While chicken is cooking, stir tomato sauce, basil and garlic.
- Heat to boiling. Simmer 10 minutes.
- Add margarine.
- Pour over chicken.
- Sprinkle Parmesan cheese on top.
- Cover.
- Cook 1/2 hour at 350u0b0.
- Uncover and put Mozzarella cheese on top; bake until cheese melts (approximately 5 minutes).
- Serve with side of spaghetti.
