Peanut Butter Loaf
- 1 c. plus 2 Tbsp. all-purpose flour
- 1/3 c. granulated or firmly packed light or dark brown sugar
- 1 Tbsp. double-acting baking powder
- 1 c. skim milk
- 1/3 c. less 1 tsp. chunky peanut butter
- 1/4 c. margarine
- 1 egg
- 2 tsp. vanilla extract
- Spray

- 3-inch loaf pan with nonstick cooking spray; set aside.
- On paper plate or sheet of wax paper combine dry
- ingredients;
- set aside.
- Preheat oven to 350u0b0.
- In medium bowl,
- using
- a
- wire whisk or fork, combine remaining ingredients, beating until egg is blended (peanut butter and margarine will
- be
- lumpy).
- Stir in dry ingredients, stirring just until moistened.
- Pour into sprayed pan and bake for 45 to 50 minutes (until
- loaf
- is
- golden and a cake tester, inserted in center, comes
- out dry).
- Set loaf in pan on wire rack for 5 minutes to cool
- slightly,
- then
- invert
- onto
- rack for 5 minutes to cool slightly,
- then
- invert
- onto
- rack.
- Remove
- pan
- and let cool completely.
- To serve, cut into 12 equal slices.
