Pumpkin Cake
- 2 3/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. cloves
- 1 tsp. cinnamon
- 3 eggs, beaten
- 2 c. sugar
- 1 c. applesauce
- 16 oz. pumpkin
- 1 c. chopped raisins
- 1/2 c. chopped pecans
- vegetable spray
- 1 tsp. powdered sugar
- 1 c. whipped topping
- Combine first 7 ingredients in a large bowl.
- Make a well in the center of mixture.
- Combine eggs and next 3 ingredients. Add to dry ingredients.
- Stir until moistened.
- Fold in raisins and pecans.
- Spoon into a 12-cup Bundt pan coated with vegetable cooking spray.
- Bake at 350u0b0 for 1 hour and 10 minutes or until toothpick inserted comes out clean.
- Cool in pan for 10 minutes and remove from pan.
- Cool completely.
- Sprinkle with powdered sugar.
