Middle Eastern Souvlaki
- 600g cubed lamb (leg steaks or backstrap) Safeway 1 lb For $5.99 thru 02/09
- 1/2 cup KRAFT Italian Dressing
- 2 tablespoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- Cucumber Dressing
- 1/2 cup natural yoghurt
- 1/3 cup KRAFT Classic Mayonnaise
- 1 continental cucumber, finely chopped
- 1 tablespoon freshly chopped mint
- To Serve
- 8 pocket or pita breads
- 100g lettuce mix
- 2 tomatoes, diced Safeway 1 lb For $1.29 thru 02/09
- Mix lamb, dressing and lemon juice in a large bowl, cover, refrigerate for half an hour or overnight.
- Thread lamb onto skewers.
- Preheat a BBQ plate or grill on high, cook lamb skewers for 6 - 8 minutes on medium, turning occasionally, or until lamb is cooked to your liking.
- Combine yoghurt, mayonnaise, cucumber and mint.
- Mix to form a dressing.
- Place pocket breads on a baking tray and warm under the grill for 1 minute each side or until warmed through.
- TO SERVE, place 2 pocket breads on a plate, top with a quarter of mixed lettuce, 2 lamb skewers, tomatoes and cucumber dressing.
- Repeat with remaining ingredients.
