Chicken Alberghetti
- 3 chicken breasts, boned, skinned and cut in half
- salt and pepper
- 2 eggs, slightly beaten
- 3/4 c. dry bread crumbs
- 1/2 c. butter
- 8 oz. prepared Italian
- 1/2 c. light cream
- 6 slices Mozzarella cheese
- 6 slices Swiss cheese
- Parmesan cheese
- Season chicken with salt and pepper.
- Dip in egg and roll in crumbs.
- Saute in butter until browned.
- Dilute spaghetti sauce with cream.
- Keep out 2 tablespoons of mixture.
- Pour sauce in bottom of covered casserole dish.
- Add chicken.
- Top each piece of chicken with one slice Mozzarella cheese and one slice Swiss.
- Add reserved sauce.
- Sprinkle with butter and Parmesan.
- Cover and bake at 350u0b0 for 45 to 60 minutes.
- Serves 6.
