Homestyle Shepherd's Pie
- 1 lb. (450 g) baking potatoes (about 2), peeled, chopped Safeway 2 pkg For $5.00 thru 02/09
- 1 lb. (450 g) extra-lean ground beef Safeway 1 lb For $3.99 thru 02/09
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup frozen mixed vegetables (carrots, corn, peas), thawed, drained
- 1 clove garlic, minced
- 1/2 cup 25%-less-sodium beef broth
- 1/2 cup Philadelphia Cream Cheese Product
- 1/4 cup milk
- Heat oven to 375 degrees F.
- Cook potatoes in large saucepan of boiling water 20 to 25 min.
- or until tender.
- Meanwhile, brown meat with onions on medium-high heat in large nonstick skillet; drain.
- Return meat mixture to skillet.
- Add vegetables and garlic; cook and stir 1 min.
- Stir in broth; bring to boil.
- Mix cream cheese product and milk until blended.
- Add 1/4 cup to meat mixture in skillet; cook and stir 1 to 2 min.
- or until heated through.
- Spoon into 8-inch square baking dish sprayed with cooking spray.
- Drain potatoes, reserving 1/4 cup of the cooking water.
- Return potatoes and remaining cream cheese mixture to saucepan; mash until smooth, adding some of the reserved cooking water if necessary.
- Spread over meat mixture in baking dish.
- Bake 25 to 30 min.
- or until heated through.
