Low Calorie Soup - Spinach and Clam Soup

  1. Place the bacon, anchovy fillets, onion and garlic in a large saucepan.
  2. Cook over medium heat, stirring for 3 minutes, or until the bacon begins to brown.
  3. Add the stock and bring to a boil.
  4. Stir in the spinach, clams, and cream and return almost to a boil.
  5. Add the salt and pepper, lower the heat and simmer
  6. for 4 minutes.
  7. Serve immediately.
