Tex Mex Chick En Chiladas Recipe

  1. Heat oven to 350 degrees.
  2. Mix chicken, Monterey Jack cheese and salsa.
  3. Spoon chicken mix down center of crepes.
  4. Fold ends of crepes over chicken mix.
  5. Place folded sides down on greased cookie sheet.
  6. Bake 15 min.
  7. Place avocado, lowfat sour cream, water, salt, pepper and garlic in blender container; cover and blend on high speed till smooth, about 1 minute.
  8. Pour into saucepan.
  9. Cook and stir over low heat till warm.
  10. Serve over crepes.
  11. Garnish with tomato and cheddar cheese.
  12. 6 servings.
