Pasta With White Beans And Tuna Fish
- 3/4 lb. pasta shells
- 1 Tbsp. plus 1 tsp. olive oil
- 1 can cannellini beans (undrained) or white Northern
- 1 can water pack tuna, drained
- 1 1/2 c. vegetable stock
- 1/2 large red onion, chopped fine
- 1/2 tsp. dried oregano
- salt and pepper to taste
- 1/4 c. grated Parmesan cheese
- Cook pasta according to directions. Drain and coat with 1 teaspoon olive oil to keep from sticking; set aside. In large skillet, combine beans, tuna, vegetable stock, 1 tablespoon olive oil, oregano and pasta. Simmer 5 to 7 minutes to allow mixture to thicken. Add salt and pepper. Turn off heat and let sit 20 to 25 minutes. Place in individual serving bowls. Top with Parmesan cheese. Serve warm with tossed salad or serve cold as a salad. Serves 4.
