Spicy Sausage Sweet Potato Bake
- 2 teaspoons olive oil
- 3 white sweet potatoes, peeled and cut into wedges
- 2 sweet onions, peeled and quartered
- 2 (16 ounce) packages Hillshire Farm Smoked Sausage or Polska Kielbasa, cut into bite-size pieces
- 1 (10 ounce) jar pickled banana peppers, drained
- 4 tablespoons chimichurri sauce (optional)
- 1 teaspoon Cajun seasoning
- 4 tablespoons butter
- Preheat oven to 425 degrees F (220 degrees C).
- Lightly oil a 9x13 glass baking dish.
- Arrange sweet potatoes, onions, sausage in baking dish.
- Pour entire jar of pickled peppers over ingredients.
- Sprinkle with seasoning, drizzle with chimichurri, and top with pats of butter.
- Cover dish tightly with foil.
- Bake for 15 minutes.
- Remove foil and bake until vegetables begin to brown, about 10 more minutes.
