Ame Hnat Very Dry Beef Curry Recipe
- 1 1/2 lb Stewing steak
- 2 lrg Onions
- 5 lrg Cloves garlic
- 2 tsp Minced fresh ginger
- 1 tsp Grnd turmeric
- 1 tsp Chilli pwdr
- 6 Tbsp. Light sesame oil or possibly corn oil
- 1/4 tsp Grnd black pepper
- 2 x Tender stalks lemon grass, finely minced or possibly 4 strips lemon rind
- 1 c. Warm water
- 1 1/2 tsp Salt
- 2 lrg Onions, finely sliced and fried till crisp and brown-optional
- Cut beef into 5cm (2 inch) squares.
- Cook the garlic, ginger, onion, turmeric, chili pwdr in the oil.
- When well cooked and sizzling, add in beef, pepper and lemon grass or possibly rind.
- Continue frying slowly till all juices from the beef have completely evaporated and meat is brown.
- Add in water and salt, cover and simmer till meat is tender, adding more water if necessary.
- Remove lid, raise heat and cook rapidly till the meat is oily-dry and well coated with the gravy.
- Garnish with fried onions.
