Spun Fruits
- 1 cup flour
- 1 pinch salt
- 1 egg
- 14 cup milk
- 14 cup water
- oil, for frying
- 1 cup sugar
- 3 tablespoons water
- 1 tablespoon oil
- 1 large apple, peeled, cored and cut into 2 in. chunks
- 1 banana, peeled and cut into 1 in. pieces
- ice water
- Combine flour, salt,egg, milk and 1/4 cup water in blender until smooth.
- In a heavy bottomed saucepan combine sugar, Tb water and 1 Tb oil.
- Cook over low heat until sugar dissolves.
- Bring to boiling and cook rapidly without stirring until a pale caramel color.
- While sugar is dissolving, heat oil for frying.
- Dip a few pieces of fruit in the batter, and drop into the hot oil.
- Fry until crispy and golden.
- While fruit is still hot and crisp, use tongs to quickly dip fruit into hot caramel syrup.
- Stir to coat evenly.
- Dip immediately into ice water to harden the syrup.cool completely before serving.
- fruit inside remains hot for awhile.
