Cranberry - Banana Bread

  1. Place cranberries in medium saucepan.
  2. Cover and cook over medium heat 5 minutes or until cranberries begin to pop.
  3. Uncover and remove from heat.
  4. Combine sugar and oil in a medium bowl; beat at medium speed of an electric mixer 2 minutes or until well blended.
  5. Add egg and egg whites; beat until light and lemon colored.
  6. Combine dry ingredients;
  7. add to creamed mixture alternately with bananas, mixing well after each addition.
  8. Fold in cranberries.
  9. Pour batter into a 9 x 5 x 3-inch loaf pan coated with cooking spray.
  10. Bake at 350u0b0 for 55 to 60 minutes.
  11. Cool in pan 10 minutes; remove from pan and let cool on wire rack.
