Fiesta Corn Bread

• 1 lb. hot sausage or lean ground beef
• 1 c. chopped onion
• 1/2 c. jalapeno peppers
• 3 c. corn meal
• 1 can creamed corn (17 oz.)
• 1 tsp. sugar
• 2 tsp. salt
• 2 tsp. baking powder
• 1 c. salad oil
• 4 eggs
• 2 c. milk
• 8 slices American cheese

1. Preheat oven to 350u0b0.
2. In large skillet, cook beef or sausage until broken up and browned.
3. Drain off fat.
4. Add onion and peppers; cook until tender.
5. Set aside.
6. In large bowl, combine remaining ingredients except cheese.
7. Add meat mixture.
8. Pour half the mixture into greased 9 x 16 x 3-inch pan.
9. Cover with cheese slices.
10. Pour remaining mixture over cheese.
11. Bake for 1 hour or until lightly browned.
