Fiesta Corn Bread
- 1 lb. hot sausage or lean ground beef
- 1 c. chopped onion
- 1/2 c. jalapeno peppers
- 3 c. corn meal
- 1 can creamed corn (17 oz.)
- 1 tsp. sugar
- 2 tsp. salt
- 2 tsp. baking powder
- 1 c. salad oil
- 4 eggs
- 2 c. milk
- 8 slices American cheese
- Preheat oven to 350u0b0.
- In large skillet, cook beef or sausage until broken up and browned.
- Drain off fat.
- Add onion and peppers; cook until tender.
- Set aside.
- In large bowl, combine remaining ingredients except cheese.
- Add meat mixture.
- Pour half the mixture into greased 9 x 16 x 3-inch pan.
- Cover with cheese slices.
- Pour remaining mixture over cheese.
- Bake for 1 hour or until lightly browned.
