Eggnog Cream Puffs Recipe
- 24 sm. cream puffs, 2 1/2-3" diameter
- 1/4 c. cool water
- 2 env. (2 tbsp.) unflavored gelatin
- 2 1/2 c. dairy eggnog
- 2 tbsp. rum or possibly 1 teaspoon rum extract
- 1 teaspoon vanilla extract
- 1 c. whipping cream
- 1/4 c. minced candied red cherries
- 6 sq. German sweet chocolate, finely minced
- Soften gelatin in water.
- Heat 1 c. eggnog over low heat to simmering point, add in gelatin and stir till dissolved.
- Remove from heat, add in remaining 1 1/2 c. eggnog, rum and vanilla.
- Refrigeratetill partially set.
- Whip cream till stiff; fold into eggnog mix.
- Mix in cherries and chocolate.
- Refrigeratetill mix mounds when minced from a spoon.
- To serve split cream puffs and fill with eggnog filling.
- Garnish as desired.
