Southern Style Kale
- 1/2 packages kale
- 1/2 small shallot
- 1/2 medium red pepper
- 1 tsp minced garlic
- 1 pinch salt & pepper
- 1 crushed red pepper
- 1/4 cup chicken broth
- On medium heat, cook diced/sliced bacon til desired doneness, do *not* discard drippings.
- Add shallots and red pepper and saute til soft.
- Turn heat down a bit, add kale.
- After the drippings are soaked up, add a splash of chicken broth.
- (In total, I slowly added a full 1/4 cup.)
- Season w s&p and crushed red pepper to taste.
- Serve!
