Horchata Cream Brownie Bites

  1. Heat oven to 375 degrees F. Place foil or paper liners into 48 mini muffin pan cups; set aside.
  2. Melt chocolate chips, butter, espresso powder and salt in 1-quart saucepan over low heat, stirring occasionally, until smooth.
  3. Pour into bowl; cool 5 minutes.
  4. Add sugar and eggs to chocolate mixture; mix well.
  5. Stir in flour until well combined.
  6. Divide batter evenly between prepared muffin pan cups.
  7. Bake 9-11 minutes or until edges are just set.
  8. Cool completely; remove from pans.
  9. Place cream cheese and powdered sugar into bowl; beat at medium speed until smooth.
  10. Add whipping cream and rum; beat until stiff peaks form.
  11. Pipe or dollop heaping teaspoon frosting onto each brownie bite.
  12. Sprinkle lightly with cinnamon, if desired.
  13. *Substitute prepared horchata or omit.
