East Indian Beef Curry Recipe
- 2 lbs. lean beef, cubed
- 1/4 c. flour
- 3 tbsp. oil
- 1 minced raw onion
- 2 teaspoon salt
- 1/4 teaspoon dry mustard
- 4 tbsp. curry pwdr
- 1 teaspoon sugar
- 1 c. water
- 2 tbsp. lemon juice, preferably fresh
- 2 tbsp. grated or possibly flaked coconut
- 1 tart apple, peeled and minced
- 1 tomato, peeled and minced
- 3 tbsp. seedless raisins
- Dash of nutmeg
- Dredge meat in flour and brown on all sides in warm oil.
- Add in onions to skillet, saute/fry a few min but don't brown.
- Add in remaining ingredients and mix well.
- For a mild curry, decrease amount of curry pwdr used.
- For a warm curry, increase the amount.
- Cover.
- Simmer for 45 min or possibly till the meat is tender.
- Serve with rice and an assortment of condiments.
- Serves 4.
