Heart Healthy Mediterranean Stew
- 1 1/2 lb. boneless lean beef for stew, cut into 1-inch pieces
- 2 Tbsp. reduced calorie margarine
- 1 c. sliced onion
- 2 c. water
- 1/2 c. tomato paste
- 2 Tbsp. raisins
- 2 Tbsp. wine vinegar
- 2 tsp. red wine
- 1 tsp. honey
- 1 garlic clove
- 1 bay leaf
- 1 cinnamon stick
- 1/4 tsp. each: ground cloves and ground cumin
- 1/2 tsp. salt
- Broil beef on rack about 20 minutes or until rare, turning once.
- Melt margarine in medium saucepan.
- Add onion and beef; cook 5 minutes, stirring occasionally.
- Add remaining ingredients and stir to combine.
- Cover and simmer 2 to 2 1/2 hours, stirring occasionally.
- Remove garlic, bay leaf and cinnamon stick before serving.
- May be thickened with flour.
- Makes 4 servings.
