Lemon Pound Cake
- 1 cup Crisco
- 2 cups sugar
- 4 eggs
- 1 cup buttermilk
- 2 tablespoons lemon extract
- 3 cups flour
- 12 teaspoon baking soda
- 12 teaspoon baking powder
- 12 teaspoon salt
- 2 12 cups powdered sugar
- 14-12 cup lemon juice
- Put all ingredients for cake in bowl and beat 3 minutes.
- Pour in greased and floured tube pan.
- Bake @ 325 degrees approximately an hour.
- (I tend to underbake this cake a bit it is moist and delicious).
- LEMON GLAZE: Mix 2 1/2 cups powdered sugar and lemon juice until its smooth but still thick.
- Pour over cake while still hot.
- (I usually poke holes in this cake with a skewer so the icing will penetrate).
