Gyro Flatbread with Tahini Tzatziki Sauce

  1. For the Tahini Tzatziki Sauce: Mix first 7 ingredients (yogurt, sour cream, tahini paste, lemon juice, honey, minced garlic, grated cucumber) together in a bowl.
  2. Cover and chill until ready to serve.
  3. For gyro meat: Preheat oven to 375F.
  4. Mix dry ingredients (oregano, parsley, salt, pepper, onion powder, garlic powder) together.
  5. Knead the spice mixture into ground beef (or turkey), like you are making a meatloaf.
  6. On a foil lined baking sheet, make 2 loaves with the meat.
  7. Bake for 35 minutes.
  8. Let rest for 5 minutes, then slice into strips.
  9. Assemble the sandwiches: Heat flatbreads in a nonstick skillet for 10 seconds each side.
  10. Spread sauce on flatbread.
  11. Place 2-4 strips of gyro meat in center of bread.
  12. Spoon a little more sauce on top.
  13. Garnish with feta, sliced tomato, and sliced onion.
  14. This is a fairly mild recipe as far as seasoning goes, due to the fact I am feeding a 9 year old!!
  15. Please feel free to add more oregano or garlic if you like!
