Riso Arancia
- 1/2 c. butter
- 4 medium carrots, cut in 1-inch strips
- 1 medium onion, thinly sliced
- 2 Tbsp. grated orange rind
- 4 oz. canned green beans, drained
- 3/4 c. slivered almonds
- 1/3 c. chopped pistachio nuts
- 1 c. honey
- 1 tsp. turmeric
- 1 1/2 tsp. salt
- 2 c. long grain brown rice, washed, soaked in cold water for 30 minutes and drained
- 3 3/4 c. water
- In a medium saucepan, melt butter over moderate heat.
- Add carrots and onions.
- Cook, stirring occasionally, for 5 to 7 minutes or until onion is soft, but not browned.
- Stir in orange rind, green beans, almonds, pistachios, honey, turmeric and 1/2 teaspoon salt.
- Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
