More! Casserole
- 1 1/2 lb. lean ground turkey or beef
- 1 large onion, pureed in blender
- 2 green peppers (optional)
- 1 Tbsp. sea salt
- 2 Tbsp. shortening (optional)
- 2 tsp. oregano
- 1 1/2 c. canned tomatoes, pureed
- 2 Tbsp. chili powder
- 1 pkg. frozen corn (2 c.)
- 1 pkg. frozen peas
- 1 pkg. frozen beans
- 8 oz. pkg. noodles
- 1 lb. sharp Cheddar cheese, shredded
- Cook meat in shortening until it turns white.
- Add onion, peppers (optional), salt, oregano, tomatoes, chili powder and vegetables.
- Cover and simmer for 45 minutes.
- Cook noodles according to package directions; drain and combine with meat mixture.
- Spoon mixture into two 2-quart baking dishes and cover evenly with shredded cheese.
- Bake covered at 350u0b0 for 45 minutes. Yields 9 to 12 servings.
- Better made 24 to 36 hours before cooking to season.
