Chicken Rice Paper Rolls
- 1/2 regular BBQ chicken, skin removed and shredded
- 1 carrot, peeled and finely shredded Target 2 lb For $3.00 thru 02/06
- 1 red capsicum, finely sliced
- 1 Lebanese cucumber, finely sliced
- 30g vermicelli noodles, soaked in boiling water for 5 minutes, drained
- 1/3 cup KRAFT FREE* Thai Lime & Coriander Dressing
- 2 tablespoons KRAFT* Light Smooth Peanut Spread
- 1 teaspoon soy sauce
- 1 teaspoon honey
- 20 x 20cm rice paper rounds
- 5 iceberg lettuce leaves, cut into quarters
- Toss the chicken, carrot, capsicum, cucumber, noodles and 1 tablespoon of dressing until well combined.
- Whisk together the remaining dressing, peanut spread, soy sauce and honey.
- Set aside.
- Soak rice paper in hot water for 30 seconds until softened.
- Drain on a teatowel.
- Place a piece of lettuce and some chicken mixture onto each piece of rice paper, fold in sides and roll up to enclose filling.
- Repeat with remaining rice paper and filling.
- Serve with the peanut dipping sauce.
