Cajun Meatloaf
- - ground beef
- 2-1/4 qt. STOVE TOP Chicken Flavored Stuffing Mix, Flex Prep
- 2-1/2 cups water
- 6 each large eggs, lightly beaten
- 1 Tbsp. ground black pepper
- 1 Tbsp. garlic powder
- 1-1/2 tsp. ground red pepper
- Mix ground beef, 1 quart of the Cajun Barbecue Sauce (or 2/3 cup for trial recipe), water, Stuffing Mix, eggs and seasonings.
- Shape into 6 loaves (or 1 loaf for trial recipe).
- Place in (2-inch) full-size hotel pans (or, in half-size hotel pan for trial recipe).
- Bake at 375F for 45 minutes.
- Spread each loaf with 1/3 cup of the remaining Cajun Barbecue Sauce.
- Continue baking 25 to 30 minutes or until meatloaves register at least 160F internally.
- Cool 10 minutes before cutting into slices to serve.
- Serve with additional Cajun Barbecue Sauce, if desired.
