Spicy Pickled Carrots

  1. In a small stainless steel or enamel saucepan, bring vinegar, honey and spice to a boil, stirring to dissolve honey.
  2. Remove from heat and cover pan to keep contents hot.
  3. Pack carrots into 6 prepared pint jars, leaving a 1/4 inch headspace.
  4. Add honey mixture, leaving a 1/4 inch headspace.
  5. Check for air bubbles.
  6. Adjust headspace by adding more liquid if needed.
  7. Process jars in a boiling water bath for 30 minutes.
  8. Adjust time according to your altitude.
  9. Makes 6 pints.
