Molded Spinach Salad

  1. Cook spinach according to pkg.
  2. directions; drain, pressing out moisture through sieve.
  3. Chop spinach, add celery, cottage cheese, 1/4 cup sour cream, 3 tablespoons horseradish, 4 tablespoons mayonnaise and salt to taste.
  4. Place in an oiled 1-1/2 quart ring mold; chill until firm.
  5. Unmold salad, garnish with watercress and cucumbers sprinkled with grated carrots.
  6. Blend remaining sourcream, horseradish and mayonnaise for dressing.
