Littlemafia's Mini Meatloaf - Scotch Eggs
- 250 g ground meat
- 4 hard-boiled eggs
- 1 finely chopped onion
- 1 egg
- 2 tablespoons flour
- 2 tablespoons breadcrumbs
- salt
- pepper
- oil (for frying)
- Fry the onion.
- Add it to the ground meat and season with salt and pepper.
- Take a quarter of this mixture and wrap it around a shelled hard boiled egg.
- Roll in the flour,dip in the beaten egg and roll again in the breadcrumbs.
- Deep fry.
- When cold slice it up in half or quarters.
