Chicken Curry Comfort

  1. Cook rice according to package.
  2. Heat Coconut Milk on medium, whisk in Curry Paste when milk is warm.
  3. Add chicken broth.
  4. Cook for 2 minutes until bubbly.
  5. Add the brown sugar and salt to taste.
  6. Add the vegetable and cook on medium for 4 minutes.
  7. Add the chicken and reduce to low heat.
  8. Simmer for 20 minutes to absorb best flavor.
  9. (can be more or less, but the longer time you let it simmer, the more flavorfull it becomes.

  11. Remove from heat and serve over rice.
