Louisiana Dirty Rice
- 3 Tbsp. cooking oil
- 2 medium onions
- 2 ribs celery, finely chopped
- 3 green onions, finely chopped
- 3 Tbsp. parsley, minced
- 1/2 lb. lean ground meat
- 1/4 lb. chicken livers, chopped or ground
- 4 cloves garlic, minced
- 2 Tbsp. dry sherry
- 1 Tbsp. Worcestershire sauce
- 1 beef bouillon cube in 1/2 c. hot water
- 3 c. cooked rice
- salt and pepper to taste
- To heated oil, add onions, celery and green onions.
- Saute until soft, at least 10 minutes.
- Add parsley, ground beef, livers and garlic; brown meat thoroughly.
- Add sherry and other liquids. Cover and simmer over low heat for 30 minutes.
- Remove from heat; add rice and mix well.
- Serves 4.
