Couscous with Red Onion and Chives

  1. In a saucepan cook onion in oil over moderately low heat, stirring, until softened.
  2. Add vinegar and cook 1 minute.
  3. Remove pan from heat and stir in couscous, boiling water, and salt and pepper to taste.
  4. Let couscous mixture stand, covered, 5 minutes.
  5. Fluff couscous with a fork and stir in chives.
