Oriental Chicken And Rice
- coarsely chopped peanuts or cashews
- 4 chicken breast fillets
- 1/4 c. packed brown sugar
- 2 tsp. cornstarch
- 1/4 c. water
- 3 Tbsp. vinegar
- 2 tsp. soy sauce
- 1/2 tsp. chicken bouillon granules or 1 cube
- 1/8 tsp. garlic powder
- 1/8 tsp. ground ginger
- 1/4 medium green pepper, julienned
- 1 Tbsp. chopped pimento
- hot cooked rice (approximately 2 c.)
- Stir-fry chicken until done.
- Meanwhile, for sauce, in a small saucepan, combine brown sugar and cornstarch. Stir in water, vinegar, soy sauce, bouillon, garlic powder and ground ginger. Add green pepper and pimento; cook and stir until thick and bubbly.
- Remove from heat; keep warm.
