Hot Browns

  1. For the sauce.
  2. Melt butter in a saucepan over medium-low heat; add chopped onion.
  3. Cook over low heat until onion has softened.
  4. Stir in flour and cook, stirring, until smooth.
  5. Gradually add milk, stirring constantly.
  6. Add remaining ingredients; cook, stirring, until cheese is melted and sauce is smooth.
  7. Beat egg yolk in a small bowl; add about 1/4 cup of the hot liquid to it, stirring constantly.
  8. Pour egg yolk mixture into the hot liquid; stir until the sauce is smooth and hot.
  9. To reduce the risk of curdling, a double boiler can be used after the onions are cooked.
  10. Making the Hot Brown.
  11. Heat oven to 400 F, in a shallow backing dish add Texas toast, layer with turkey breast.
  12. Pour a generous amount of sauce.
  13. Top with a slice of tomato and 2 strips bacon.
  14. Repeat for second Hot Brown.
  15. Place in oven 10-15 minutes or until sauce in starting to brown on edges.
